Home Bread Baking in a Wood-Fired Oven

 

Say no to supermarket bread! Come and learn the basic skills of bread making that you can take home to use all year round.   Experience using Bee UrbanÕs outdoor wood-fired cob oven to bake your breads!

 

This introductory course will cover a range of easy to make yeast and sourdough breads, that you can easily reproduce at home in a regular oven.  You will learn the basic skills to mix, knead, raise and bake your own bread.   You will also get a live sample sourdough starter culture to take away with you and keep, to get your home bread production growing.  Since itÕs Bee Urban, weÕll also be incorporating honey into a couple of the breads, and some of herbs/produce from the garden, too.

 

The course will be held in 3 sessions over 3 consecutive weekends in April.  All breads will be baked in Bee UrbanÕs outdoor wood-fired cob oven.

 

Level: Beginner Š just bring your love of good bread, and an apron or old t-shirt (things can get messy)

 

Basic Breads - Sunday 10th of April, 10am to 3pm 

 

Making white, brown and seeded loaves. The basics of measuring, mixing, kneading, proving and baking. Simple yeast dough dos and donÕts. Learn what good, happy dough should feel and smell like.  How to judge when itÕs ready to bake, and when itÕs time to get it out of the oven.

 

European Breads Š Saturday 16th of April, 10am to 3pm

 

Develop your skills a bit. Scandinavian Rye bread, Focaccia, and Ciabatta.  You will also be given a sample sourdough starter culture to feed, nurture, mix ready for use the next weekend.  This is your homeworkÉ J  

 

Sourdough Breads Š Sunday 23rd of April, 10am to 3pm

 

Mixing and preparing a basic white sourdough, a French ŌPain au LevainÕ and one or two variations to mix things up a bit.

 

Materials

 

_      Clear printed recipes will be provided each week, with instructions for home-use baking

_      All materials including flour, yeast, natural sea salt and firewood for the oven will be provided.

_      A basic lunch with Bread (of course), cheese and fruit will be provided. Feel free to bring anything else you would like to eat/drink beyond tea and coffee
